Madruga is a James Beard nominated, neighborhood craft bakery and café devoted to the pleasure of preparing and sharing ingredient driven breads, pastries, and lunch and breakfast fare. We are a popular family owned retail bakery, serving our local community in Miami, Florida. We are seeking a Production Manager to oversee the bread and pastry departments. The ideal candidate possess both strong leadership and baking experience, ideally in an artisan bakery setting.
Responsibilities:
1. Manage Employees & Production
a. Manage a team of 5-10 employees, engaging with each daily
b. Hire, train, and develop staff as bakers and great team members
c. Direct daily production volume, creating predictions based on sales, and projecting numbers seasonally based on holidays, etc.
2. Hands-on production
a. Participate in daily production of bread and pastry
b. Train and guide team on recipes, controlling for product quality and correct technique
c. Develop new recipes seasonally
3. Ordering and procurement
a. Conduct inventory and order products as needed
b. Oversee organized system for receiving and managing inventory
4. Leadership
a. Lead by example in work ethic, attitude, communication, and energy
b. Solve problems; use creativity and innovation to create improved practices and solutions
c. Motivate team members
d. Work successfully through high stress situations
e. Collaborate creatively with owners and other managers to work towards constant success
Expectations for a successful candidate:
- Previous professional baking management experience
- Enjoys being in a hands-on leadership role and working 50 hours a week
- Excellent attendance and time management skills
- Great sanitation practices
- High sense of of ownership in work
- Constantly motivated to produce the highest quality products
- Great written and oral skills; Able to use Excel
