Orchard Hill Breadworks is a community-centered village bakery located in rural southwestern New Hampshire. We specialize in wood-fired sourdough breads. Our 13-month, full-time, residential bread baking apprenticeship is ideal for aspiring professional bread bakers or recent culinary school graduates looking to begin a career in bread baking. We accept 3 apprentices each year with staggered arrival dates of January 1, May 1 and September 1.
Apprentices progress through every facet of work in our small-scale production bakery from scaling and packaging, to mixing and shaping, to proofing and baking. Apprentices are introduced to the skills necessary to become a successful professional baker: mixing, dough handling, shaping of a variety of dough from yeasted, enriched to high-hydration, naturally leavened, peel work, oven management and scoring. Apprentices join a team of committed long term employees who offer guidance and support. Apprentices work an average of 40 hours a week, with work on 5 or 6 days. We offer room, board and a $12,000 annual living stipend. We bring over 20 years of bread-baking experience to a supportive, collaborative work environment with plenty of opportunities for additional learning experiences in the arts, education, farming and other culinary pursuits.
