
Merzbacher's is seeking an exceptional Production Manager to lead our artisan bread production team. Following the acquisition of Metropolitan Bakery's wholesale business, we've nearly doubled in size and are looking for a hands-on leader to help shape the next chapter of our bakery.
We bake naturally leavened and yeasted breads for roughly 200 wholesale customers throughout the Philadelphia region. What began as one baker renting oven time overnight has grown into a busy wholesale bakery committed to producing exceptional bread at scale while maintaining high standards for quality and consistency.
This role combines commercial artisan baking with production leadership. You'll work alongside the team when needed while overseeing scheduling, training, quality, systems, inventory, and process improvement. We want a baker who reads dough: someone who knows a ripe poolish from an immature one and can recognize and recover an underdeveloped batch. We're looking for someone with significant artisan bread experience, previous leadership experience, strong organizational skills, and a calm, steady approach to managing people and production.
You'll report directly to the owner and have real ownership over how the production department operates, working closely with the rest of our management team to continue building a strong, reliable bakery.
Salary starts at $72,000, with opportunities for growth, profit sharing for the right long-term leader, and relocation assistance for an exceptional candidate.
