This is a recording of a class that originally took place on March 7, 2022. Join expert teacher Jimmy Griffin as he covers a survey of famous Irish specialties. In this two hour demo, Jimmy teaches classic Irish Brown Soda bread that can be made and ready to eat in just an hour, Fruited Soda bread, Hot Cross Buns—just in time for Easter, Raspberry Buttermilk scones which were a signature at Griffin’s for more than 140 years, Griffin’s Grinder—a sandwich bread baked in a traditional Irish wood form (variations will be discussed) and a light and savory Potato and Dill Shamrock Bread, made with an overnight cold sponge and shaped into a festive clover. ABOUT THE INSTRUCTOR Born into a baking family dating back to 1876, Jimmy Griffin is a sixth-generation baker whose 38 years in the family business and extensive international career have made him one of Ireland’s most accomplished baking professionals. A graduate of DIT with honours—and later with a BSc and MSc—he has competed for Ireland multiple times in the Coupe d'Europe de la Boulangerie, earning a European bronze in 1999, coached and managed Irish teams to multiple European Bakery Cup podium finishes, and contributed to Ireland’s 2006 World Bakery Championship gold. Jimmy has served as an international juror, demonstrator, and teacher across more than a dozen countries, was named an Honorary Professor at the Agrarian University of Stavropol, and served as President of the Jury for the 2016 Bakery World Cup. A lecturer at TU Dublin and author of five books, he continues to teach globally and consult widely within the baking industry. You will receive access to a private YouTube link.
